Make Your Own Vinegar
Now you can easily make an endless supply of your own, natural, live red wine vinegar for cooking, healthy living and more!
What is included:
1 piece (about 4” in diameter) of concentrated red wine vinegar mother (the solid part of a vinegar culture which includes colonies of the bacterium Acetobacter Aceti floating on cellulose raft).
1/4 cup of natural, live, unfiltered, unpasteurized red wine vinegar liquid culture to give the Mother some room to grow.

How it works:
Acetobacter turns ethanol (the alcohol in wine) into acetic acid (the acid in vinegar), and produces cellulose along the way, which, after a time, can become big enough to make a solid disc that floats on the surface of the vinegar culture. Liquid part of the Mother is also contains billions of near-invisible colonies of Acetobacter suspended in the live, liquid culture.
You will need:
Red wine (preferably with as low sulphites as possible);
A glass or pottery wide-mouthed vessel with a loose-fitting lid;
Clean cheesecloth or paper coffee filter;
A few weeks to let the Mother grow.
A NOTE ON SHIPPING:
The Vinegar Mother is hardy, but should be treated like the living being she is. So we package her very carefully in double-layer food-grade sealed bags. We use the USPS PRIORITY shipping to ensure as safe route as possible.
