White Wine Vinegar Mother Pellicle with Starter White Wine Vinegar and Instructions.
Make Your Own Vinegar
- 1 piece (approx. 4” in diameter) of concentrated white wine vinegar mother. This is the solid cellulose disc that holds active colonies of Acetobacter Aceti bacteria.
- 1/4 cup of raw, unpasteurized, and unfiltered live white wine vinegar liquid culture to provide an immediate boost for your first batch.
The fermentation process is straightforward. Acetobacter bacteria consume the alcohol (ethanol) in white wine and turn it into acetic acid. Over time, the bacteria build a layer of cellulose on the surface, which develops into a new, solid vinegar mother disc. The included liquid culture also contains millions of active bacteria to help kickstart the process.
- White wine (for best results, choose one with low sulfites or sulfite-free);
- A wide-mouth glass jar, crock, or ceramic vessel;
- A breathable cover, such as a paper coffee filter or clean cheesecloth with a rubber band;
- A dark, warm spot (70-80°F) and 3 to 4 weeks to let the fermentation finish.
